FOOD SCIENCE factoids in orange text:

(1) FRUIT & VEGETABLE STORAGE (Part 2)

(for part 1, click here)

Following up on my last newsletter on the ripening rate of fruits, I figured I'd include a useful table on fruit and vegetable storage from the USDA. Unfortunately, most refrigerators are too cold at 37F for ideal fruit and vegetable storage.

All fruits and vegetables like high humidity: 80-95% RH, whereas most refrigerators are quite dry at 30-50% RH, so be sure to use the drawers within refrigerators that are designed to keep fruits and vegetables fresher in the needed higher humidity to prevent drying out and rotting.

Some advanced refrigerators have compartments that can be set to higher temperatures to better preserve fruits and vegetables, since 37F is too cold for most produce. (see table below)

Table of lowest storage temperature before quality suffers

Refrigerators typically are 37F

Lowest storage temp (F) Defect if stored too cold (down to 32F)
Apples 35 Internal browning, soggy breakdown
Watermelons 36 Pitting, objectionable flavor
Oranges 36 Rind disorders
Potatoes 41 Mahogany browning
Avocados 45 Internal browning
Cucumbers 45 Pitting, water soaked spots, decay
Eggplant 45 Pitting or bronzing, increasing on removal
Grapefruit 45 Scald, pitting, watery breakdown, internal browning
Limes 45 Pitting
Cantaloupes 45 Pitting, surface decay
Sweet peppers 45 Pitting, discoloration near calyx
Honey dew 46 Pitting, surface decay
Mangoes 50 internal discoloration
Tomatoes (ripe) 50 Breakdown
Winter Squash 53 Decay
Bananas 55 Dull color when ripened
Sweet potatoes 55 Decay, pitting, internal discoloration
Lemons 56 Internal discoloration, pitting

Interestingly: apples, watermelons, and oranges can handle refrigerator temps!

Just to be clear, the above are lowest STORAGE temps, not ripening temps. Fruits ripen generally above 55-60F (ie, room temp.)
