Following up on my last newsletter on the ripening rate of fruits, I figured I'd include a useful table on fruit and vegetable storage from the USDA. Unfortunately, most refrigerators are too cold at 37F for ideal fruit and vegetable storage.
All fruits and vegetables like high humidity: 80-95% RH, whereas most refrigerators are quite dry at 30-50% RH, so be sure to use the drawers within refrigerators that are designed to keep fruits and vegetables fresher in the needed higher humidity to prevent drying out and rotting.
Some advanced refrigerators have compartments that can be set to higher temperatures to better preserve fruits and vegetables, since 37F is too cold for most produce. (see table below)

Interestingly: apples, watermelons, and oranges can handle refrigerator temps!
Just to be clear, the above are lowest STORAGE temps, not ripening temps. Fruits ripen generally above 55-60F (ie, room temp.)
