(1) FRUIT RIPENING RATE

This tip might sound obvious: put your fruit in the fridge ONLY WHEN IT'S RIPE!

"Ripening": the sweetening of the fruit naturally by enzymatic breakdown of carbohydrates to sugars (as well as the softening of the fruit's texture) The ripening rate (ripeness per unit of time):

“Rule of thumb” for fruit ripening: temperature storage: every 10 degree Celsius (18F), the rate of fruit ripening will roughly double or triple between common storage temperatures of 50F up to 100F (10 Celsius to 37 Celsius.)

It's kind of annoying to mix the units between Fahrenheit and Celsius. Every 18 degrees Fahrenheit, fruit ripening rate will change by 2-3 times!

This is the Q10 temperature coefficient (click for wikipedia page)

Below a “critical temperature”, fruit will not ripen (sweeten/soften.) All fruits have a different critical temperature. Bananas and tomatoes will not ripen (aka “degreen”) below 10-13C (50F to 55F.)

There is also an upper critical temperature for ripening. Above a certain upper temperature, fruits fail to ripen properly. Tomatoes do not “degreen” above 30C (86F.) Some pears barely ripen above 77F. (2)
