FOOD SCIENCE factoids in orange text:
(1) Edible acids!
Salt and vinegar potato chips! Oranges! Lemons! Grape juice and wine! I'm not going to list all the foods and their natural acids. (Well, salt-and-vinegar potato chips aren't totally "natural", but they are addictive to me and I have to keep them out of my sight.)
Below is a table for your eyes only. Acids are super-important for both the natural preservation, but also contribute immensely to the flavor of the food. A whole book could be written on food acids (and likely another book on food alkali.)
A lot of "bad bacteria" such as Clostridium botulinum, Salmonella, E. Coli and Listeria are inhibited by acids.
Here are two tables you'll hopefully find informative:
Food Acid | Examples of Foods | Toxicity Information | Metabolism |

Citric |
Lemons, limes, oranges, strawberries, tomatoes | Generally safe. Excessive amounts may cause gastrointestinal discomfort. | Converted to intermediates in the citric acid cycle; produces ATP |
Malic |
Apples, pears, cherries, grapes | Generally safe. Excessive intake may cause gastrointestinal irritation. | Converted to oxaloacetate in the citric acid cycle; involved in gluconeogenesis |
Tartaric |
Grapes, tamarind, bananas (cream of tartar) | Generally safe in typical amounts. High doses may cause gastrointestinal issues. | Metabolized in the liver; broken down into simpler compounds for excretion |
Acetic |
Vinegar (e.g., apple cider vinegar), pickles, fermented foods | Safe in small amounts. Large amounts can cause digestive issues and damage tooth enamel. | Converted to acetyl-CoA in the liver; enters citric acid cycle |
Lactic |
Yogurt, kefir, sauerkraut, fermented pickles, sourdough bread | Safe and well-tolerated. High concentrations might cause digestive upset in sensitive individuals. | Converted to pyruvate in the liver; involved in Cori cycle and gluconeogenesis |
Formic |
Some fruits and vegetables (minor amounts), honey | Generally safe in small amounts. High concentrations can be irritating or toxic, but not typically encountered in food. | Metabolized in the liver; converted to carbon dioxide and water |
Oxalic |
Spinach, rhubarb, beet greens, Swiss chard | Safe in moderate amounts. High intake can interfere with calcium absorption and contribute to kidney stones in susceptible individuals. | Metabolized in the liver; converted to carbon dioxide and water; can be excreted in urine |
Phytic |
Whole grains, nuts, seeds, legumes | Generally safe. High amounts can inhibit mineral absorption but are usually not a concern with a varied diet. | Metabolized by intestinal microbes; partially broken down to inositol and phosphates; mineral-binding effects |
Bad Bacteria | Preservation effectiveness of Food Acids |
---|---|
Clostridium botulinum | Inhibited at pH below 4.6; stronger acids such as acetic and citric and effective |
Salmonella | Inhibited to some extent by lower pH; acids reduce growth but may not eliminate risk. |
E. coli | Growth reduced at pH below 4.5; acids are effective in inhibiting growth. |
Listeria |
Inhibited at lower pH but can survive in mildly acidic conditions; acids help but are not fully effective. |
Food acids are a useful tool for controlling bacterial growth, but they are often used in combination with other preservation methods for better safety and effectiveness.
