#1: Food Science Factoids: Seed Oil Controversy! (Part 2)
In case you missed it, here's my previous newsletter on the Seed Oil Controversy. My previous newsletter motivated me to:
1. Cook more with Olive Oil
Instead of sauteeing with canola. Canola oil is relatively healthy and canola is much better than oils from soybeans, corn, sunflower seeds and safflow seeds, as you can see by the chart I created, above. Linoleic Acid: 18:2 is what you want to reduce in consumption, since linoleic acid is so prevalent in the "western diet", which can include as contain as high as 20:1 Linoleic acid to omega-3, while some say the ratio should be 1:1! (but realistically 5:1 or 4:1 Omega-6 to Omega-3 is good to target.)
("Omega-6" is a molecular-category that includes other fatty acids, not just Linoleic Acid, of which Linoleic acid is the most common Omega-6 fatty acid.)
2. In order to consume more omega-3...
I stocked up on a Puritan's Pride Omega-3 Fish oil supplement. (My former employer.) It was on sale for about 50% off for Black Friday, so I got a great deal! I'm going to store the extra jars in the freezer to reduce oxidation of the omega-3s.
To pick an omega-3 oil supplement, you ideally want more EPA than DHA, according to current research, about 1.25 to 1 EPA to DHA (1:1 is good, but as much as 1.5 to 1)
Omega-3 supplements standardized/tested to contain EPA and DHA come at a premium price, but at the very least: a fish oil standardized to contain a minimum of omega-3 fatty acids is what you want to buy. (You don't want fish oil capsules that might not contain any omega-3.)
I'm also a fan of Algae oil, which are produced in commercial fermenters, so there is a lower risk of contaminants, and is arguable more sustainable. The omega-3 rich oil is created in a controlled environment. Algae Oil supplements were developed with NASA. I had the privilege of having my first boss out of college be one of the former scientists who worked on this NASA Algae Oil.
