 "Sun-dried tomatoes" have to be fumigated with sulfur dioxide, since it can take up to two weeks to dry outside, and without the chemical additive, the tomatoes become moldy and infested with insects.

My tomatoes are dehydrated indoors, in my dehydrator, for 5-10 hours (not 2 weeks) so there is no need for sulfur dioxide.
